Perfect Summer Treat:

Cool, sweet, and and even spicy! Paletas (Mexican ice pops) are a show stopper! I like to make these in small pops (ice-cube tray sized). They are a perfect small treat! Keep them in your freezer as a summer staple or for a special occasion.

Cool, Sweet, and Spicy! These paletas (Mexican ice pops) are a show stopper. I like to make these in small pops (ice-cube tray sized). They are a perfect small treat!
Ingredients
  • 3 cups cucumber (peeled and cut into ½ inch cubes)
  • ⅔ cup sugar
  • ⅓ cup lime juice (freshly squeezed)
  • 1 medium-sized jalapeno (seeded and deveined), minced
Instructions
Step 1
Place all ingredients in a blender or food processor and process until smooth.
Step 2
Fill molds leaving ¼" to ½ " from the top to allow for expansion. Place tops on molds and insert sticks. Freeze for 4 hours or until frozen.
Step 3
Un-mold by dipping in hot water for 2 seconds and squeezing the sides of the mold.
